This is a great Thai soup that eats like a meal. This one is chicken based, but traditionally made with shrimp. I used our own chicken stock for this, but you can use any lower sodium chicken stock. This renal friendly, delicious soup is also flavored with Kaffir lime leaves, lemongrass, and galangal, few mushrooms, lime, green onions, cilantro, and other goodies! Add cooked rice noodles to make it a meal.

Lemon Snickerdoodles
Lemon snickerdoodles are kidney friendly cookies because they are typically made with white flour, which is lower in phosphorus and potassium than whole grain flour. Also, they don't contain chocolate or nuts in which both are higher in potassium and phosphorus. Simply add the zest of one lemon when creaming the butter (we used smart balance in these) and sugar. Just use your favorite recipe!
Renal Friendly Pasta Salad & Pork Sirloin
This dinner idea is renal friendly and simple to prepare.
We used tri-color pasta and a variety of fresh, renal friendly vegetables and tossed them with a simple homemade vinergerette dressing. We then added some parmesan and mozerella cheese, and then chilled the salad for 3-4 hours.
We then chose boneless pork sirloin cuts and pan fried them in a griddle pan.
Simple and delicious!

Hi friends, thanks for visiting our blog. We thought we might share a little bit about what we do!
Jacqui and Brian work in the medical field while raising our 1 yr. old, Ava. In our spare time, we have been working on getting a private medical nutritional therapy counseling service that focuses on helping people with kidney disease stages 3 and 4. These stages are considered to be pre-dialysis. Stage 5 means dialysis for many people with less than 15% of their remaining kidney function. Kidney RD's focus is to help our patients treat the symptoms of uremia, which is the build up of toxins, and the side effects of declining kidney function. These efforts may prolong the necessity of dialysis initiation for some time in many patients. Our aim is to educate our patients and promote them to make kidney friendly dietary and lifestyle changes.
The more you know about any disease that you may be burdened with the more likely of increasing your years of survival. The kidney diet is often looked at as what we like to describe as "ugly." After ten years of counseling dialysis patients, we have found that this is certainly not true!

This is a London broil pita sandwich. It is quick, easy, kidney friendly, and tasty!
Simply grill the steak and cut at an angle into strips after letting it cool on a cutting board for ten minutes. Cut up bell pepper and onions and sauté in a little butter or we use smart balance. Heat up the pita in a toaster over and put steak, a little shredded part skim mozzarella cheese (this is a lower phosphorus cheese), then peppers/onions, then drizzle with a little horseradish sauce (1 T. Lite mayo, dash Worcestershire - We can't say it either!, 1tsp. - 1T. Fresh granulated or finely shredded horseradish, a little black pepper). Omit or add less pepperoncino peppers to cut back on salt.
Try a cranberry grape spritzer with your sandwich! Fill a glass with ice, fill until almost full with your favorite mineral water (we like Perrier), then top with 1-2 oz. cranberry-concord grape 100% juice.

Peach Moon Pies
Pastry:
1 cup unbleached all purpose flour
1 cup whole wheat pastry flour
1/2 tsp. coarse salt
2/3 cup vegetable shortening + 2 T. butter
4 T. cold water
Filling:
6 medium peaches, diced (skins on)
1 cup sugar
¼ cup corn starch
2 T. lemon juice
¼ cup water
Icing:
2 T. lemon juice
~ 1 cup powdered sugar
Other:
1 egg
Directions:
Cut shortening and butter into flour and salt. Add water slowly to make a balled dough. Place balled dough into freezer.
Cut peaches. Mix cornstarch and water. Add lemon juice and sugar to peaches. Add cornstarch and water to mixture and stir. Let sit for 10 minutes or longer. Drain some juice off peaches with colander.
Roll out dough. Find a bowl or cup to cut out circles of dough.
Whip egg and wash each circle lightly on outside edges, but don’t use all the egg.
Spoon about 2 T. of peach mixture per circle.
Fold over edges and pinch together like a dumpling. Repeat. Use fork to press edges of each moon shaped turnover and place on baking sheet.
Egg wash all pies. Use sharp knife and slit each pie 3 times on top. Bake at 400 for first 15 minutes, then 350 for 35-45 minutes.
Make icing by adding lemon juice slowly to powdered sugar. The icing should be thick, but not too thick that it will not drizzle.
Let pies sit for 5 minutes on baking sheet, then use spatula to remover and cool on cooling rack. Drizzle over pies after letting them sit until cool.
Makes about 8 moon pies.
Kidney Diet Tip: The pastry can be made without salt. Substitute all regular flour instead of whole wheat to make more renal friendly. Peaches are lower to medium in potassium, so these little homemade treats are kidney friendly. Other lower potassium fruit filling options include: strawberry, raspberry, blackberry, blueberry, cherry, and apple.
