This is a great Thai soup that eats like a meal. This one is chicken based, but traditionally made with shrimp. I used our own chicken stock for this, but you can use any lower sodium chicken stock. This renal friendly, delicious soup is also flavored with Kaffir lime leaves, lemongrass, and galangal, few mushrooms, lime, green onions, cilantro, and other goodies! Add cooked rice noodles to make it a meal.
